Chicken Coconut Soup

Coconut water has become a popular drink in the U.S.  My husband loves to drink coconut water from fresh coconut and with the recent attention on how much electrolytes coconut water have, our household has been buying cases of coconut water from Costco or cases of fresh young coconuts from Asian markets.  I do find coconut water to help with my dehydration.  Nowadays, fresh young coconuts or coconut water is a constant stable in our household.

For this New Year dinner, I wanted to try something new.  I watched a cook show once sharing the recipe of coconut water and pigeon soup.  However, fresh pigeons are hard to come buy so I decided to alter the recipe and make chicken soup with coconut water.


Ingredients:

1 stewing chicken
1 lb of chicken breast
6 fresh coconuts
2 slices of ginger
4 cups of water
Salt to taste


Directions: 

1) Deskin stewing chicken

2) Blanch stewing chicken and chicken breasts

3) Crack open the coconuts, we used a edge of the cleaver to open the coconuts

4) Use a spoon and scrap 3 coconut meat

4) Put stewing chicken, chicken breasts, 6 coconut water (the water inside the fresh coconuts), 3 coconut meat, 4 cups of water, 2 slices of ginger, all in a soup pot

5) Medium heat for 1 hour

6) Add salt to taste

7) Presentation: save the coconut to hold the soup in
